Avocado Mayo – something new to try this summer

1 Cup Olivado extra virgin avocado oil

1/4 cup of chickpea water (aquafaba) (brine from tinned chickpeas)

1 tsp DYC white wine vinegar

1 tsp mustard

1 NZ Avocado

Salt and pepper


Place all ingredients in a small food processor except for avocado and seasoning. Blend until creamy.

Add avocado flesh and process until smooth. Season to taste.

Serve as a dip or enjoy as a dressing.
